Ingredients :
- 40g sugar
- 4 apples
- 8cl Pommeau
- Lemon juice
- Butter
- 250g mascarpone
- 3 eggs yolks + 3 whites
- Sponge finger biscuits
- Cocoa powder
- Bring water and sugar to a boil in a saucepan.
- Add 8 cl of Pommeau.
- Place this syrup aside.
- Peel the apples and cut them into small squares.
- Sprinkle them with lemon juice then fry them in butter and add 2cl of Pommeau.
- In a bowl, add the mascarpone, egg yolks, 5cl of Pommeau and whisk .
- In another bowl mis 3 egg whites with the sugar.
- Add this mixture to the previous mixture.
- Soak the sponge fingers with the syrup and put them at the bottom of a dish.
- Add th apple pieces on top and then the creamy mixture.
- Sprinkle with cocoa powder and chill for 12 hours.
